Join us all month long in January as we take a nostalgic trip back to Comfort Food the way only Grandma could make it!

All challenges will be Recipe Challenges based on actual recipes - converted to Scrapbook Challenges. . . lots of fun recipes to share, and fond memories of days gone by.

Remember - A new Blue Plate Special challenge is posted each Monday, Wednesday, Friday and Saturday, and participants have until the 3rd of the following month to complete and post their creations.

Prize will be a $20 Gift Certificate to their favorite online store (random drawing).....

Recipe:
Black Bottom Cupcakes

Batter

1 1/2 c flour
1 c sugar
1/2 c cocoa
1 tsp. soda
1/2 tsp salt
1 c water
1/3c oil
1 T vinegar
1 tsp vanilla

Filling

1 8oz. cream cheese
1 egg
1/3 c sugar
1/8 tsp salt
beat these ingredients together and then fold in 1 c choc. chips

Use PAPER MUFFIN CUPS--filled with batter on the bottom, filling, and batter on top. Can sprinkle with sugar and nuts. Bake 350 for 30 minutes.
Makes 24


Challenge:
1. Use 3 pattern papers to represent the layers of the cupcakes plus 1 dark cardstock to represent the black bottom---you will use this to be your base and the mats for your other pattern layers and picture/pictures. See my LO as an example
2. Use something round, scalloped or ruffled to represent the paper muffin cups
3. Sprinkle with sugar and nuts---add embellishments to your liking.
4. Adds some numbers to represent the baking time and temperature.
5. Add a heart because you will love these cupcakes.
