Lemon Sugar Cookies
Preheat Oven to 350 degrees
Ingredients:
1 cup butter, softened 1 cup Confectioners Sugar
1 cup vegetable oil 2 eggs
1 cup sugar 1 tsp. vanilla
4 cups flour 1 (3.4 ounce) package Instant
lemon pudding
1 tsp. cream of tartar 1 tsp. baking soda
Directions:
Cream butter, oil and sugars. Beat in eggs,vanilla, and dry pudding mix. Combine flour, cream of tartar, and baking soda. Add to wet ingredients. Drop by tablespoons at 2 inches apart onto ungreased cookie sheet. Flatten with a glass dipped in sugar.
Bake at 350 degrees for 12-15 minutes until lightly browned. Remove to wire rack to cool.
