Almond Joy Cookies Jan 19 2022

Join us all month long in January as we take a nostalgic trip back to Comfort Food the way only Grandma could make it!

All challenges will be Recipe Challenges based on actual recipes - converted to Scrapbook Challenges. . . lots of fun recipes to share, and fond memories of days gone by.

Remember - A new Blue Plate Special challenge is posted each Monday, Wednesday, Friday and Saturday, and participants have until the 3rd of the following month to complete and post their creations.

Prize will be a $20 Gift Certificate to their favorite online store (random drawing).....

Todays recipe challenge is short and sweet and yummy! Just four ingredients

1. one 14 ounce bag of Coconut
2 . 2 cups Choc Chips
3. 2/3 cup chopped Almonds
4. 1 can 14 oz.Sweetened Condensed milk
Pre heat oven to 325 degrees.
Line large baking sheet with parchment paper
In large bowl combine all four ingredients
Stir until combined
Scoop out dough with a cookie scoop onto baking sheet
Moisten the tips of your fingers with water and shape into discs, Pat the tops flat
Bake for 12-14 minutes until coconut is starting to turn golden brown
Let cool on baking sheet
Store in airtight container
ENJOY!!

Now for your challenge
Scrapbook something that brings you joy
Use a white background (coconut)
Use chipboard for your embellishments (choc chips)
Use a brown journaling tag (Almonds)
Use the word Sweet somewhere in your title (sweetened condensed milk)

MMMM. these cookies sound yummy. They are probably not on my list of healthy foods :lol: Plus I am sure I would never eat just 1
