Thinking about leftover turkey already! Do you have any special dishes you make with leftover turkey?

I have always made turkey salad for sandwiches which we pack up for the first day of deer hunting.

When the kids were young, I had a recipe for turkey tetrazini that they all liked, with noodles and a creamy white cheese sauce. I've lost the recipe somewhere along the way.

Not a big fan of turkey so I don't have any leftovers. When we do it is usually DH using them up in sandwiches.

We always go to my husband's family dinner and it's like a family reunion of around 100 people or more - so no leftovers for us. Last year I did make our little family a turkey dinner the weekend after Thanksgiving, but we just warmed it all up again as is.

Turkey salad, turkey pot pie, have a few more as I usually try to buy extra turkey when they are cheap

Barb I just take a can of cream of chicken soup and add a little sour cream and grated cheese and mix it in with cooked spaghetti noodles and turkey or chicken top with grated cheese and bread crumbs and bake for our Tetrizzini recipe. You could add mayonnaise and lemon juice instead of sour cream.
I pretty much used leftover cooked turkey in the same recipes you would use chicken. I always boil the bones and get a good soup broth.

Turkey enchiladas etc.
